Coconut Tarts

Preparation

I usually make 12 little tarts from shortcrust pastry trimmings and only about 150g made up pastry is required.
For me a coconut tart with raspberry jam in the base is a bake from childhood but you could try lime marmalade, a grating of lime zest over the marmalade and then the coconut mix over - they are delicious !
