Cheese and Caraway Scones

There are times when a slice of cake just will not do and a savoury bite is required in order to satisfy my cravings. This little cheese scone is packed full of flavour and I have added caraway seed which lifts the deliciousness !!  Makes 6 https://youtu.be/Ptj2RnRz7rM

Cheese and Caraway Scones

Ingredients

125g Self Raising flour

25g Rye flour (if you don’t have this use all self raising)

½ tsp baking powder

¼ tsp salt

25g butter at room temperature

75g finely grated strong cheddar cheese

1 tsp caraway seeds or chopped chives

1 egg

1 tsp mustard

2-3 tbsp whole milk

 

Preparation

Preheat the oven to 210 degrees c (fan)

In a roomy mixing bowl sift together the flours, baking powder and salt then add the butter and rub in by hand until the mixture resembles fine breadcrumbs. Add most of the cheese (keep 1 large tablespoon back to sprinkle over the scones before baking) and the seeds (or chives) and stir to combine using a knife.

Make a well in the centre then in a cup or small jug mix together the egg, milk and mustard then pour this into the well in the mixture.   Bring together using the knife then use the hand to form the dough into a soft, fairly moist ball.

Transfer to a lightly floured surface and roll lightly to a thickness of 2cm. Use a 6 cm cutter and cut out six scones, rerolling and cutting until the dough is used.  Transfer to a baking sheet then top off with a little milk and the remainder of the grated cheese.

Bake for 15-18 minutes until the scones are risen, dark golden and smelling amazing !

Best eaten same day.
