Nutty Cookies / Hob Nobs & Rye and Fennel Thins

Nutty Cookies – If you like Hob Nobs then you will love these. My recipe is a cross between a biscuit and a cookie – being crunchy on the outside but then squidgy on the inside. This recipe will make 18-20 biscuits but I often double up and bake on four baking sheets. If you have a food processor you may like to blitz your porridge oats with the toasted nuts – I think the biscuit is better.

Rye & Fennel Thins - On occasions you may wish to impress your friends and make your own biscuits for cheese! These taste very interesting and complement cheese perfectly.
